I went to make bread this morning, and found out, too late, that I didn't actually have enough white flour. Oops!
So, instead of tossing the whole thing, I decided to improvise. I took the last of our oatmeal and ran in through the blender to make oat flour, then added a little extra whole wheat flour as well.
The ingredients/amounts I used it today's bread, which turned out delicious, by the way, are as follows:
4 1/2 Tsp dry yeast
3 cups warm water
2/3 cup maple syrup (divided into 2 x 1/3 cup)
2 cups white flour
2 cups (ish) oat flour
3 Tbsp butter
1 Tbsp salt
4 1/2 (?) cups whole wheat flour.
(Additional 2 Tbsp butter brushed on top after it came out of the oven.)

The bread turned out wonderful tasting, but not quite the best texture for sandwiches. With a bit of research, I've found that ideally your oat flour shouldn't substitute for more than 1/3 of your white flour, and my substitution was about half. So - when I'm doing it intentionally instead of the "Oh no! I'm out of flour!" that I had this morning, I'll probably use 4 cups white flour, 2 cups oat flour (one cup added with the white, and the other cup added with the wheat) and 3 1/2 cups of whole wheat flour.
